酸価測定の公定法である酸・アルカリ滴定法の原理に基づいてpH指示薬、塩基性物質を濾紙に含浸し、乾燥させた試験紙です。 フライ油(加熱油脂)など、現場の品質管理に適しています。 判定時間(測定所要時間)は極めて短く、約30秒となっています。 判定操作はごく簡単で、誰にでも判定を行うことができます。 従来の酸価測定キットと異なり、溶剤を使用していないため、火気を特に意識することなく使用することができ、また、使用済みの試験紙は償却が可能です。

簡単な操作でフライヤー油等の酸価を測定し、交換タイミングを調べることができます。 測定範囲は1.5/2.5/3.5で、3段階の測定が可能です。 『弁当及びそうざいの衛生規範(昭和54年6月29日環食第161号)』では、交換時期の目安を”酸価値が2.5を超えたもの”としており、2.5付近の測定が簡便に行えます。

揚げ物調理に使用して劣化した食用油の廃油時期(酸価値2.5～3.0)の目安を判断する為の試験紙です。 調理後のまだ熱い油に先端を浸けるだけなので、簡単に使えます。 油の捨て時がわかりやすい!紙が紫から緑に替わると捨て時です。 簡単にわかりやすいのでアルバイトの方や新人さんでも判断できます。 厚生労働省の「弁当及びそうざいの衛生規範について」(環食第161号、昭和54年)の通知では、「揚げ調理中の油脂が発煙点170℃未満、酸価値2.5超、カルボニル値50超で明らかに劣化していたら、そのすべてを新しい油脂と交換すること」としています。

使用している油脂、サラダ油など、常温で液体の食用植物油の過酸化物価を直接検査できます。 製品の製造段階でのチェック、流通状況の把握に非常に有効です。 油脂または抽出油脂分に試験紙を浸漬し、その呈色程度からPOVを判定します。 全操作時間は約4分間の簡易測定です。

TBA法により、油脂含有食品の劣化の程度を調べる、試験紙です。TBA(Thiobarbituric Acid)が油脂の劣化生成物と反応して、赤色色素を生じます。TBA法は、乳製品、バター、チーズ、魚肉、畜産物、クッキーなど、いろいろの油脂含有食品の劣化の程度をみる指標として、食品の分野で広くもちいられています。測定の際は、試験紙に水蒸気を当てて2分間の加熱が必要です。

水や土壌に含まれるオイルの有無を検出します。 炭化水素やガソリン、潤滑油と反応すると青色試験紙は濃青色に変色します。
